Inspired by my sweet tooth, Coco-Not Your Average Cookies are a healthier alternative when you need that bit of sweet and don't want the guilt or empty calories. These are made with healthy, energy sustaining ingredients and coconut sugar instead of cane sugar which doesn't spike your blood sugar the way table sugar does. These little bites of goodness are great for the whole family!
What you need:
1/4 cup coconut oil, warmed
1/4 cup organic coconut sugar
1 egg
1 tbl vanilla extract
1 tbl natural peanut butter
1/8 tsp baking soda
1/8 tsp baking powder
Pinch of salt
3/4 cup almond meal
1/2 cup oats
1/4-1/2 cup dark chocolate chips
Preheat oven to 350. With mixer, combine warmed coconut oil and coconut sugar, vanilla, peanut butter and egg. Mix in baking soda, powder, salt, almond meal, oats and chocolate chips.
Line a baking sheet with parchment paper and use a tablespoon to scoop out cookie dough and place about an inch apart. Bake 8-10 min depending on how soft or crisp you like your cookies.
