Frozen Mint Chip Cookie Pie


I love mint chip ice cream and I love Oreo cookies and this combines both. I remember a friend made this for a pot luck once and it was so yummy! I never asked for the recipe but figured it out along the way. It's quick and easy and you could make different variations by combining your favorite ice cream and your favorite cookies. Like chocolate chip cookies and vanilla cookie dough ice cream, mmmm, that would be yummy... ok, back to this one. If you can find the pre-made chocolate cookie crust, use it, if not you can make your own.
 
You need - 1 Pint of Mint Chocolate Chip Ice Cream - 13 Oreo Cookies - 2 Tbsp Butter - Hot Fudge

 
For the chocolate cookie crust... open the Oreos and remove the filling, either toss it or indulge! I put the cookies in a mini food processor and turn it on but you could also put them in zipper bag and crush them up that way. 
Add the butter (softneded) once the cookies are crushed up and combine.


Pour the cookie mixture into a pie pan and press in to the pan with the back of a spoon.
Scoop the softened ice cream in to the cookie crust and smooth over with the back of a spoon, running the spoon under hot water helps to smooth it out a little.
 
Cover with foil and place in the freezer until solid again. At least an hour.
 
When you are ready to serve, heat up the hot fudge topping, slice up your frozen pie and serve with the hot fudge.
