I stole this idea from a Pampered Chef party I attended recently. We made a S'mores Cake in one of their dishes in the microwave in 4 minutes!! Amazing. But since I haven't received my order yet and my daughter mentioned s'mores for dessert tonight I took what I remembered of the recipe and put my own twist on it. Their recipe used sour cream which immediately made me think of Greek yogurt. I'm going to tell myself this is healthier and that I get some added protein by using the non-fat Greek yogurt. It was absolutely wonderful. Light, fluffy, airy and moist. We did not miss the oil at all. I also used semi-sweet chocolate chips for the topping instead of milk chocolate bars. But you could use either depending on your taste.
Not only does this cake only have a few ingredients but it's easy. I put it in the oven as we started to eat dinner and it was ready as we finished up.
What you need:
1 box chocolate cake mix, I used devils food cake
2 1/2 cups non fat Greek yogurt
2 eggs
Mini marshmallows or large marshmallows cut in half
1/2 cup semi sweet chocolate chips, melted
2 graham crackers, crumbled
Preheat oven to 350. Mix cake mix, eggs and yogurt in a bowl and pour into greased 9x12 baking dish. Bake at 350 according to box directions or until you can poke with a toothpick and it comes out clean. It was about 20-30 min.
Once cake is done, top with marshmallows and return to the oven, under the broiler, until marshmallows are light brown. Don't walk away-it happens fast! Top with crushed graham crackers and melted chocolate.
