Breakfast Stuffed Potato


Potato, eggs, cheese and bacon all in one place and in a cute little package. You can add any other toppings you want like veggies, ham, sausage, or my personal favorite.. Green chilis. 

The inspiration..The potato skins I had left over from baked potatoes the night before. Great way to use up leftovers, especially if you have kids who only eat the insides out of a baked potato. 

What you need:
4 potato skins
4 eggs
1oz cream cheese (jalapeƱo cream cheese if you like a little spice)
1/4 cup shredded cheese
2 pieces of bacon chopped

Heat oven to 350. Line a baking sheet with foil and place potato skins on top. Season skins with salt and pepper. In a bowl beat the eggs with softened cream cheese. Pour mixture into the potato skins until about 3/4 full. Sprinkle on bacon. Bake for approx. 20 min. Once done top with cheese and remove from the oven once the cheese melts. 

Easy and smart!
