In day dreaming about all of the ways I could eat the lemon curd I had just made, besides out of the jar, I thought about the Strawberry Cheesecake Chimichangas I made the night before.. And then it occurred to me.. What if I replaced the strawberries with the lemon? And so I did. And it was amazing! Like unbelievably amazing! It was like fried lemon merengue pie!
What you need:
1 tortilla (I use the uncooked ones from Costco and precook it)
1oz softened cream cheese
1/2 tablespoon plain Greek yogurt
1/2 tablespoon sugar
1-2 tablespoons of lemon curd
Extra sugar for rolling the chimichanga in after it is fried
Oil for frying
Heat a little oil in a pan for frying. Mix together cream cheese, Greek yogurt, and sugar. Spread in the middle of your tortilla and then spread a thin layer of the lemon curd on top of that, fold each side of the tortilla in and roll like taquito. I secure the tortilla with a toothpick and then remove it before serving.
When the oil is hot gently fry each side of the filled tortilla until golden in color and then remove it and roll in sugar. Simple. I served with a little whipped cream on the side and a fresh strawberry. A bite of lemon goodness and a bite of fresh strawberry, absolutely perfect.
