Another Pinterest inspired indulgence... these little goodies are as good as they look. I don't normally like fruity desserts as much as I like a chocolate treat but this sounded interesting so I thought I'd experiment. This experiment turned into a definite favorite!
You can make this for one or for a crowd, just as easy either way. The ingredients below are for one dessert, to make more just multiply each ingredient by how many chimichangas you want to make.
What you need:
1 tortilla (I use the uncooked ones from Costco and precook it)
1oz softened cream cheese
1/2 tablespoon plain Greek yogurt
1/2 tablespoon sugar
2 strawberries, chopped
Extra sugar for rolling the chimichanga in after it is fried
Oil for frying
Heat a little oil in a pan for frying. Mix together cream cheese, Greek yogurt, sugar and chopped strawberries. Spread in the middle of your tortilla, fold each side of the tortilla in and roll like burrito. I secure the tortilla with a toothpick and then remove it before serving.
When the oil is hot gently fry each side of the filled tortilla until golden in color and then remove it and roll in sugar. It really is that easy. I served with a little whipped cream on the side. So amazing.
