Now that all the leprechaun traps have been cleaned up and shananigans have been had I have just a few moments to soak in the smiles (and disregard any attitude) from the day.. Definitely some of this will be coming back next year.
Breakfast .. Four leaf clover pancakes. A little green dye and some heart shaped pancakes make for an easy treat.
Packed lunches for school with all green foods and a rainbow.. Chips with guacamole, green fruits (Apple, pears, and grapes), edamame, and rainbow trix and lucky charms mix. Not the healthiest combo but fun nonetheless.
Dinner, traditional Corned Beef and Cabbage with Roasted Potatoes and Carrots. (All done in the crockpot.. Just added some water, half a beer, sliced onion and garlic. Cooked on low for 8 hours and added cabbage for the last hour.)
And some treats.. Leprechauns Punch (fruit punch, lime sherbet and sprite), lucky charm rice crispy treats (2 tablespoons butter, half a bag of mini marshmallows, 2 cups rice crispy cereal and 1 cup lucky charms) and pineapple pistachio ambrosia (1 container whipped topping, 1 large can crushed pineapple with juice, 1 pkg pistachio pudding mix and half s bag of mini marshmallows).
