A Taste From Taylor: Taylor's Tacos


These were all my daughter's idea. She made something similar at summer camp and adapted it to how she liked it. Because she's picky. But if she's picky and loves this, anyone will. 

What you need:
Flour tortillas
Ground beef
Taco seasoning
Refried beans
Shredded cheese
Sour cream
Avocado
Garlic salt
Green onion
Lime

This is really fun for the kiddos to help with or even make by themselves. I precook my ground beef with taco seasoning and have that all ready to go for assembly. I also shred the cheese and cut the avocados in half so that they are all ready for kid friendly cooking. 

First we use a round cookie cutter (but could use a metal can) to cut out smaller circles from the tortillas. You should be able to fit three to a tortilla. These for nicely in the muffin tins. 


You can use the scraps to make Cinnamon Sugar Scrap Chips so you have no waste and a little dessert too. I'll share that recipe later. 

Once the mini tortillas are cut out, place them in the muffin tins and push them down gently to form little tortilla cups. 


Now you fill them with whatever you please. We did taco meat and refried beans this time. 


Spoon in your filling. 


Top with cheese. Cook in preheated 350 degree oven until cheese melts and tortilla crisps slightly, about 10 min. 



While those are cooking, prepare any toppings. We made simple guacamole with two avocados, a squeeze of lime juice, a chopped green onion and garlic salt. Scoop out avocado and add other ingredients. Using a fork smash and mix together. 


My kids actually like their guacamole on the side with chips but we enjoy our tiny tacos topped with it, along with sour cream and hot sauce. 


Bonus idea: Cinnamon Sugar Scrap Chips

What you need:
The scraps from your flour tortillas
Melted butter
Cinnamon and Sugar

Place your tortilla scraps on a baking sheet. Brush with melted butter and sprinkle with cinnamon and sugar. Bake in preheated oven at 350 until crisp, about 10-15 min. 



 A fun family dinner that everyone can enjoy and participate with!
