So good and went perfectly with my Not So Traditional Pot Roast. Super simple and flavorful potatoes that are a healthier alternative to mashed potatoes when you're looking for a comfort food and yet light enough to be a side for a BBQ.
What you need:
Four medium sized red potatoes
1/2 cup beef stock
1 clove if garlic chopped
1 tbsp butter
Salt and pepper to taste
Pre-heat oven to 375. Rinse and cut your potatoes into even sized chunks. Remember that the smaller the pieces the faster the cooking time will be.
Arrange your potatoes in a baking dish. Add your beef stock to the dish, sprinkle your chopped garlic over the potatoes and season with salt and pepper. Cut your tablespoon of butter into smaller pieces and arrange on top of potatoes.
Bake at 375 for 45 minutes to an hour or until potatoes are fork tender.
Serve 'em .. And love 'em!
