Crockpot Meatballs

I'm looking for more and more make ahead meals and tried my hand at meatballs.. In the crockpot. I had heard it could work but had to try it out myself. This will now make it in to my regular crockpot Rolodex of meals. 

What you need:
1 1/2 lbs ground beef
Handful of baby carrots
Handful of spinach leaves
1 clove of garlic
1/4 yellow onion
1 egg
1/4 cup bread crumbs
1 tsp basil
1 tsp oregano
1 cup tomato sauce
Garlic salt and pepper

I prepared the meatballs the night before and then stuck them in the fridge until morning, added the tomato sauce and then cooked on low for 2 hours. The rest of the day the crockpot remained on warm until I got home to serve them. 

In a food processor, pulse the carrots, onion, spinach, and garlic until very finely chopped. Add all ingredients except the tomato sauce to a large bowl and combine. 

I use a tablespoon to scoop out portion sizes for the meatballs, rolled them in my hand and placed in the bottom of the crockpot. 

At this point you can cover and refrigerate over night, freeze on a sheet pan for make ahead crockpotting, or cook them in the crockpot topped with the tomato sauce. 

Serve over spagetti noodles with your favorite sauce. You could also freeze the cooked meatballs for an easy make ahead meal.
