Pancakes - Never From a Box Again

 
My daughter wanted pancakes for breakfast and I was out of the box mix.. and amazingly enough I couldn't find it in the store.. after much persistence on her part I agreed to try to make them from scratch. Found a recipe from Paula Deen and started throwing the ingredients together.. it was only after we were done with our new breakfast creation that I realized I never read the directions, only the ingredients. I then discovered I did it wrong, well, maybe not wrong but not as directed.. but it worked so I'm sticking to it.

You ready for my directions... measure, put in bowl, and mix! Oh, and heat a non-stick pan over medium heat, pour in about 1/4 cup of batter at a time, wait to see little bubbles in the top so you can flip and then cook the other side.

So easy I'll never buy the box mix again. I'm just going to mix a couple batches of the dry ingredients and store in an air-tight container for pancake mornings when all I have to do is add the eggs and milk, just like the box!

A money saver and one less thing for my grocery list! I'll have to thank my daughter for the push.. maybe someday...

  1. Great recipe. I like to add a tad of vanilla and cinnamon. gives a nice subtle extra flavor.
