Taco Salad the Sweeter Way and Kiddo Soft Tacos


 
I'm feelin like mexican food, but a lighter version so I decide on taco salad... there are lots of ways to make taco salad and I enjoy a variety of them but when I was growing up there was a family a couple houses down that I remember having a sweeter tasting taco salad with and every once in a while I get a craving for it. I don't know exactly how that family made it but I came up with my own version...

Sounds yummy to me but what about the kids? No way are they gonna think taco salad sounds as good as I do! What can I make for them and satisfy my craving without a lot of extra work? Soft tacos.

Here is what I had in my kitchen, you can add or delete to your liking...
 
For Both:
1 Pound ground beef
Shredded Cheese
Garlic Salt
 
For the Taco Salad:
1/8 Cup salsa
2 Tbsp Taco Seasoning
Tomato
Avocado
Corn Chips
French or Catalina Salad Dressing
Shredded Lettuce
 
For the Kiddo Soft Tacos:
Flour Tortillas
 
 
In a large skillet brown the ground beef and season with garlic salt, I just sprinkle a little over the meat and keep stirring and breaking up the meat until its crumbly. While the meat is cooking this is usually the time I take to do the dishes that are inevitably sitting in my sink. With the sink cleared out I can place a colander in there for when I'm ready to drain the fat from the meat. When the meat is fully cooked, drain.

Scoop out some of the meat, about half a cup for each kids soft taco and set aside. Return the rest of the meat to the skillet and add the taco seasoning and salsa. Heat over medium low until combined and then turn to low until you are ready to use.

Start building your salad... In a large bowl add the lettuce, about a cup and a half of lettuce per person. Cut up your tomato and avocado (the kids can help with this part) and add that, as well as shredded cheeses (as little or as much as you like) I use about an eighth to a quarter cup per person. Grab a handful of tortilla chips, crush and add. Then add the seasoned meat, about a half a cup to a cup per person. Finally top with the salad dressing, about 2 tablespoons per person. Carefully toss the ingredients together.

  

Now to assemble the kiddo soft tacos... place your flour tortilla on a plate, add about a half a cup of the kid seasoned meat to the tortilla and top with cheese. Now, if your kids like other condiments by all means add what they like, mine are simple, or so I think. Roll it up and you are ready to go. I added some refried beans and a side of avocado to serve them, and a few chips.

And for the taco salad I dished it out and topped it with sour cream and hot sauce.. and a few extra chips.

  
 

Tada! Easy, fast and yummy.. oh, and by the way.. turns out my son decided he wanted the taco salad after trying mine.. you never know!!
