Any chance I can add some veggies in my meals, even sneak them in so the kiddos don't know, I take advantage of it! If I make it with ground beef I probably added some hidden veggies in there! Here is how I take a jarred spaghetti sauce and turn it into Hot Mama Made Spaghetti Sauce! It's so good that my son eats it by itself, even cold, which I find weird but if he likes it I'm happy to let him have it. My kids helped me make it one day and discovered the hidden veggies, at first there was shock and questions like, "what, you put what in there?" but they had eaten it so many times that by that point it didn't even matter. It's healthy, it's yummy, and it's easy! Enjoy!
What you need: 1 lb ground beef (or ground turkey/ chicken) - 1/2 yellow onion - 1/2 cup baby carrots - 1/2 zucchini - 1/2 to 1 cup of baby spinach leaves - 1 clove of garlic - 1 jar of your favorite jarred spaghetti sauce (I like Prego) - a dash of balsamic vinegar - garlic salt and pepper
In a food processor finely chop the onion, carrots, zucchini, spinach and garlic.
Heat a sauté pan or sauce pot over medium, add ground beef and veggie mixture and cook until meat is browned and veggies are softened. Season with garlic salt and pepper. Drain any excess fat from mixture.
Add jarred sauce and dash of balsamic vinegar. Let simmer for 10 minutes and serve over cooked noodles.
This sauce freezes well and when I make a batch I make extra to stick in the freezer for an easy dinner any night of the week.
