Avocado Chicken Salad

For anyone looking for high protein options.. Here's a great lunch! With 20 grams of protein and just over 200 calories per sandwich it's packed with all the vitamins and healthy fats that avocados provide! And as much as I love my mayo none is used here. It's the creamy texture of the avocado that gives this sandwich all the moisture it needs. It is super easy and travels well so you can have it at home, for a picnic or take to work.

Here's what you need...
5 chicken breast tenders cooked 
1 ripe avocado
1 tbl green onion
Dash of lemon or lime juice
Garlic salt and pepper to taste
4 Multi-grain Oroweat Sandwich Thins (bread)

I boil my chicken in water seasoned with garlic salt and Mrs Dash seasoning, drain and then either shred or chop. 

Scoop your avocado out into a bowl and mash to your desired chunk ones or smoothness. I like some chunk to mine. 

Add green onion, seasoning and chicken to avocado and combine. 

Portion out for 4 sandwiches and enjoy!

You could add additional seasonings to spice this up like some hot sauce or cilantro too!
