For the love of cheese and secret veggie Lasagna


Ooey gooey cheesy lasagna - yes please!
Oh but I balanced the cheese factor out with lots if hidden veggies.. Carrots, spinach and zucchini. 

This recipe originally started in my Mom's kitchen and it has evolved every time I make it. First I added more cheese, then I found the no-boil lasagna noodles and most recently I have added the veggies to make it a balanced meal without serving it with anything else. 

What you need- 
Hot Mama Spaghetti Sauce (with hidden veggies)- see earlier post
1 Box No Boil Lasagna Noodles
16 oz Package Mozzarella Cheese (whole milk)
8 oz Ricotta Cheese (part skim)
Parmesan Cheese


The Hot Mama Spaghetti Sauce with hidden veggies is a super simple semi-homemade meat sauce with carrots, spinach, and zucchini that I threw in the food processor and cooked with the meat, drained and added jarred spaghetti sauce. You can try this or use your favorite tomato or meat sauce. 


Preheat oven to 350. 

In a 9x13 pan layer your ingredients. Sauce, no-boil noodles, ricotta cheese, mozzarella cheese and then start over. 


I do two complete layers and then top it with an additional layer of no-boil noodles, sauce and then mozzarella cheese and a sprinkle of Parmesan cheese. 

Cover with foil and bake for 30-35 min or until bubbly and hot. Remove foil and bake 10 min longer. 


Super yum! Also freezes well. It's just as easy to make two and stick one in the freezer for another night!
