Genius I tell ya! I've been craving fall flavors and since the fall line of Starbucks coffees are still months away I had to get creative! That combined with my recent French Toast cravings have inspired this new favorite.. and more flavor combinations to come!
What you need:
French Toast Bread (or any soft white or wheat bread will work too)
Cream Cheese
Pumpkin Purée
Vanilla Extract
Pumpkin Pie Spice
Egg(s)
Milk
Cinnamon/sugar mixture or powdered sugar
First you will need a rolling pin to flatten out the bread pieces. Just a few rolls in each direction will work well. Next cut the crust off each side. Spread each piece a very think layer of cream cheese and top with a thin layer of your pumpkin purée. I'd say I used about half a tablespoon. Now you roll it up and stick a toothpick through it to hold it together if you need to.
How many pieces are you making? For every 4 or so pieces you will need a batch of the following egg mixture.
Egg mixture: In a shallow dish add an egg, 2 tablespoons milk, half a teaspoon vanilla extract, half a teaspoon pumpkin pie spice and a tablespoon of pumpkin purée. Whisk together until combined.
Coat each of your roll ups in the egg mixture and pre-heat a non-stick skillet over medium heat.
Brown all sides of your roll up in the pan over medium to medium-low heat. You can remove the toothpicks about half way through if they are getting in your way. And they'll probably get in your way.
