Pan Roasted Cauliflower



I stumbled upon this creation years ago when I was trying the low-carb diet. I think I had seen cauliflower made into faux mashed potatoes and it inspired me to use cauliflower in other similar ways that I would potatoes and the idea blossomed from there. 

What you need:
1 head of cauliflower diced
1 clove garlic minced
1 tablespoon butter
1 tablespoon olive oil
1/4 cup beef broth
Garlic salt and pepper to taste

In medium pan heat olive oil and butter over medium heat. Sauté diced cauliflower and garlic until brown - about 10 min but the longer you sauté the more flavor develops. Season with garlic salt and pepper. Once the cauliflower is browned add the beef stock and let simmer until the cauliflower is tender- about 5 minutes. 

So simple and so delicious.
