Ham & Cheese Pocket Pies


I used all left overs for this extremely simple hand-held sandwich. I used my Pampered Chef Cut-n-Seal but you could use a round cookie cutter or bisquit cutter and a fork to crimp the edges to get similar results. These turned out great and everyone liked them, especially my 14 month-old. Great finger food and totally freezable for quick grab and go lunches. 

What you need:
Left over pie crust (homemade or store bought)
Slices of your favorite cheese (I used Swiss and Gouda)
Chopped left over ham (or Canadian bacon)
A dash of your favorite mustard

Preheat your oven to 350. Divide your dough into two portions and roll out to about 1/8 thick. Use your Cut-n-Seal or other cutter to gently mark where each circle will go (don't press all the way down yet). 

Place a small amount of cheese, I used precut cracker slices I had in my fridge, on the bottom. Pile on some chopped ham and then top with another small amount of cheese. Then add a dash of your favorite mustard- I used a sweet and hot mustard. 

Lay your second rolled out dough on top of your piles and carefully punch out your little pocket pies. Place on a parchment paper-lined baking sheet and bake until golden, just about 20 minutes.
