I seem to be overwhelmed with apples lately so I set out to make a couple apple pies for my freezer but then I was presented with a dilemma... I wanted some!! But I didn't really want the whole pie (because I'd probably eat the whole apple pie) so what to do?
I decided to be good and just make the pies for the freezer and then I had left over pie crust dough... Not enough for another pie but enough for a couple minis. How do you make a mini pie? I recalled the mini graham cracker crusts I've seen in the grocery store and that led me to the muffin tin, which since I've used to make other mini things with my daughter I don't know why it took me so long to come up with.
I rolled out the remaining crust, used a large circle cookie cutter to cut out the mini rounds and put them in my muffin tins. I used some of the filling I had already prepared for my pies and the crumble topping. Baked these in the oven at 375 for 20 minutes and they were done! They baked while I finished assembling the pies for the freezer. Instant gratification!
Perfect portion size. You don't even need a fork, you just pick it up and enjoy it!
